Our history
In Luis Bonifaz's home, the culinary skills of his grandmother, Mrs. Manuelita, were simply astounding. Every dish emerging from her kitchen was the result of extensive journeys through the bustling market, where she met a select group of friends and providers, all masters in their craft. The ingredients they selected included the tenderest meat, perfectly ground chochoca (dry corns smashed in a stone mixer), the juiciest corn, and a variety of fresh vegetables that elevated their meals to authentic masterpieces.
Fresh milk, with its natural essence, arrived daily, courtesy of the kind Mrs. Miguelina. Carefully chosen poultry became delightful stews for special occasions. Luis Bonifaz grew up immersed in this culinary world, and his grandmother passed on her love for cooking with each dish they prepared together.
When Luis returned to his homeland, he embarked on an adventure to explore the remotest corners of Amazonas through various jobs. There, he met the providers who now supply Amazonika with the highest quality ingredients.
Gaby Lopez's story is one of determination and passion. Inspired by her mother, Aurora, who started a small juice stand in the Mendoza market, Gaby became involved in cooking from a young age. Working alongside her mother, she learned the secrets of pastry and gastronomy. Her dream of becoming a chef led her to study at Le Cordon Bleu, where she discovered her true passion: fine pastry.
After gaining experience in various Lima restaurants, Gaby decided to return to her homeland with Luis. Together, they set out to honor the culinary traditions of the region and use the finest Amazonian ingredients in their shared dream, which they named Amazonika. Amazonika offers not only an exceptional culinary experience but also a commitment to the culinary heritage of the region and a passion for cooking. Each dish they serve celebrates the richness of Amazonas, and their love for cuisine shines through in every creation.
